DIEGO HIDALGO WHITE HONEY MICROLOT

COMPLEX ACIDITY COMBINED WITH SOFT FRUIT NOTES

This microlot comes from village of Calle Copey, in the Tarrazu region of Costa Rica.  It was cultivated by Diego Hidalgo on La Bandera farm in sandy loam soil.  Diego Hidalgo began to process coffee in 2014.  'White Honey’ processing indicates a semi-washed process where approximately 5-10% of the mucilage is intentionally left on the parchment before the coffee is dried and hulled.
